Garden radishes

What do radishes and chilaquiles have to do with woodworking and metal art?

Absolutely nothing.

BUT…

I’m of the opinion that the combination of food/nutrition/flavor is most definitely art.

So there may be some of my culinary musings here on the blog.

Let’s start with one of my favorite dishes to make and eat: chilaquiles!

I love chilaquiles.

Growing up in Southern California, there was never a shortage of incredible Mexican food.
 
Chilaquiles didn’t pop up on my radar until later in life and by then they were a bit more popular with the hipster crowd.
 
But this dish quickly set up shop in my head and never left.
 
I do a verde chilaquiles with a quick pickle radish that the whole family loves.

Verde enchilada sauce

Sea Salt & Lime Tortilla chips

Sunny side up eggs w/runny yolk

Garnish with:
Lime, Cilantro, Sour Cream, Cotija
&
Quick Pickle Radish

Radish Pickle

Sliced radish
Vinegar
Water
Lime juice
Maple syrup
Cumin powder
Coriander powder
Salt

I cannot recollect the restaurant which served up crispy radish pickle aside a heaping plate of chilaquiles, but this was a highlight for me.

The “quick” pickle is made before I start the dish and remains fresh n’ crispy and oh-so-yummy.

Play with it

My kids have most definitely been told “Don’t play with your food.”, but I always play with my recipes.
 
Following the same thing every time isn’t really my thing.
 
I want to tweak and improve and experiment to see what comes next.

So, obviously I would recommend checking out some chilaquiles.

And definitely play with your food.
